Vegan MoFo Day 8: our precious, precious pantry!

Vegan MoFo 2010!

For me, the key to eating vegan is building one hell of a pantry. Today, I’ll walk you through my spice and dry goods collection, which I admit is both bogus and sad ridiculously, and perhaps unnecessarily, extensive. Everything here is vegan, of course — even the stuff you think might not look vegan!
Whenever we’re broke, all we need to do is dig around in the pantry and we’ll be able to make nearly anything from a huge array of ethnic cuisines: Ethiopian, Moroccan, Indian, Italian, Thai, Middle Eastern, Chinese, Japanese, Mexican, and so many more. Our last apartment had a bigger walk-in pantry with a door, but our current treacherously narrow storage space will be renovated with nice new shelves and maybe some little drawers whenever we get the time and money to make it into the pantry of our dreams. Until then, let’s take it from the top left!

» 5-gallon jug of apple cider vinegar, 5-gallon jug of distilled white vinegar, 2 canning pots (racks, lid grabbers, jar grabbers), 10 pounds of jasmine rice

Phew. For lunch, nothing too exciting — crispy pan-fried Simple Soyman herb tofu and farfalle pasta with a new batch of our homemade heirloom tomato pasta sauce. Four ingredients (olive oil, tofu, pasta, sauce) + 12-minute prep time = reason for celebration. Dinner will be a simple stir-fry (yellow tofu, carrots, broccoli, oyster mushrooms, black bean sauce) because I am so, so tired. It won’t be picture-worthy, I promise. Here’s lunch, though:
