Vegan MoFo Day 8: our precious, precious pantry!

Vegan MoFo 2010!

For me, the key to eating vegan is building one hell of a pantry. Today, I’ll walk you through my spice and dry goods collection, which I admit is both bogus and sad ridiculously, and perhaps unnecessarily, extensive. Everything here is vegan, of course — even the stuff you think might not look vegan!
Whenever we’re broke, all we need to do is dig around in the pantry and we’ll be able to make nearly anything from a huge array of ethnic cuisines: Ethiopian, Moroccan, Indian, Italian, Thai, Middle Eastern, Chinese, Japanese, Mexican, and so many more. Our last apartment had a bigger walk-in pantry with a door, but our current treacherously narrow storage space will be renovated with nice new shelves and maybe some little drawers whenever we get the time and money to make it into the pantry of our dreams. Until then, let’s take it from the top left!

pantry, top shelves

» vital wheat gluten, all-purpose flour, panko breadcrumbs, tempura batter, whole flaxseeds, toor dal backstock, dried pasta: macaroni, penne, lasagna, manicotti, stelline, Pappardelle’s lemon pepper linguine (their porcini mushroom linguine is divine, but the lemon pepper kind tastes like Pledge)

garlic powder, onion powder, freeze-dried shallots, ginger powder
miscellaneous spice section

pantry, bottom shelves

» Ener-G egg replacer, powdered sugar, brown sugar, palm sugar, 2 kinds of cocoa powder, canned chickpeas, large and small TVP, red popcorn, white popcorn, rolled oats, falafel mix, hummus mix
» Dr. McDougall’s soup, Throat Coat tea, Woman’s Dong Quai Tonic tea, tom yum paste, chopped green chilis, coconut milk, canned young jackfruit in brine, canned kidney beans, canned pinto beans, shredded unsweetened coconut, walnuts, cashews, peanuts, plain stuffing cubes, besan/gram flour, cranberry granola
» glass jar containing bulk bagged spices (cloves, cinnamon sticks, etc.), short-cut vermicelli, brown lentils, chana dal, split urad dal, toor dal, masoor dal, basmati rice, misplaced box of farfalle, Israeli couscous, round and square rice paper wrappers for spring rolls, wide rice noodles, jeera papadam

Now for the hanging wall rack, from the top:

pantry, hanging wall rack top

» natural peanut butter, light corn syrup
» asafoetida, chipotle chili powder, ramen, Rich Tea biscuits
» sushi rice, somen noodles, more ramen, yeast, extra canning jars and lids
» spice powders backstock, Pomi boxed marinara sauce

pantry, hanging wall rack bottom

» giant tin of Kikkoman soy sauce, 5-pound box of Chinese noodles, Gravy Master, Kitchen Bouquet, toasted sesame oil, Hojiblanca olive oil
» mirin, sweetened/sushi rice vinegar, black rice vinegar, tahini, unsweetened rice vinegar, table sugar, balsamic vinegar
» Kecap Manis Indonesian sweet soy sauce, Shaoxing rice wine, vegetarian fish sauce, more Throat Coat tea, English breakfast tea, some random granola bar, dried sliced galangal

And finally, the floor:

pantry floor

» 5-gallon jug of apple cider vinegar, 5-gallon jug of distilled white vinegar, 2 canning pots (racks, lid grabbers, jar grabbers), 10 pounds of jasmine rice

Phew. For lunch, nothing too exciting — crispy pan-fried Simple Soyman herb tofu and farfalle pasta with a new batch of our homemade heirloom tomato pasta sauce. Four ingredients (olive oil, tofu, pasta, sauce) + 12-minute prep time = reason for celebration. Dinner will be a simple stir-fry (yellow tofu, carrots, broccoli, oyster mushrooms, black bean sauce) because I am so, so tired. It won’t be picture-worthy, I promise. Here’s lunch, though:
